Cucumber Peach Salsa Recipe

Ingredients

  • 1 medium English cucumber, diced
  • 2-3 peaches, peeled and diced
  • 1/2 small red onion, finely diced
  • 1 jalapeno, seeded and finely diced
  • 1 cup fresh cilantro leaves, chopped
  • Zest and juice of 2 limes
  • Salt and pepper

Directions

  1. Combine all ingredients in mixing bowl.
  2. Taste and adjust seasoning, as necessary.
  3. Cover bowl and store in refrigerator.
  4. Serve with any fresh protein -- fish, chicken, steak or tortilla chips.

Prep Time

  • 10-15 minutes

Blueberry Salsa

Ingredients

  • 1 1/2 cup blueberries (chop up the 1/2 cup)
  • 2 oranges, chopped
  • 1/4 cup red onion, finely chopped
  • 1 tbsp. balsamic vinegar
  • 1 tbsp. snipped fresh mint
  • 1/8 tsp. sea salt

Directions

  1. Combine all ingredients in mixing bowl.
  2. Taste and adjust seasoning, as necessary.
  3. Cover bowl and store in refrigerator.
  4. Serve with tortilla chips or a snack of your choosing!
